A simple filling antioxidant-rich snack to make for when you are craving something salty sweet. Keep a batch at work for an afternoon treat. This would be a great simple idea to make as a gift for someone special. A teacher perhaps. Putting a jar of this together wouldn't be inexpensive but you have the flexibility of adding whatever ingredients you like. Add nuts or leave them out for school safe snacking.

Serves: 2¾ cups
Ingredients
  • 1 cup pumpkin seeds (toast your own with a pinch of salt or use Living Intentions Sprouted Salted Pumpkin Seeds) or use a combination of your favourite nuts and/or seeds
  • pinch sea salt (if using unsalted pumpkin seeds)
  • 1 cup flaked toasted coconut-use the large flakes (buy toasted or make your own)
  • ½ cup Goji Berries (or dried Cranberries or Golden Berries or Mulberries)
  • ¼ cup chunks of raw chocolate (we like Giddy Yoyo Pink Salt Vanilla) or good quality chocolate chips
  • pinch of cinnamon, optional
  • optional: add in some granola chunks
Instructions
  1. Preheat oven to 325F and line a baking sheet with a Silpat liner or use parchment paper.
  2. Place seeds (or nuts of choice) on the sheet with a pinch of salt and toast for 6 to 7 minutes or until the pumpkin seeds begin to pop - do this only if you are using raw pumpkin seeds, not the Sprouted already salted ones.
  3. Remove from oven and place in a large bowl to cool.
  4. Using the same baking sheet, toast coconut for approximately 3 to 4 minutes (or use already toasted)
  5. Add to seed mixture and then stir in dried berries of choice.
  6. Add pieces of raw chocolate or chocolate chips, when the mixture has completely cooled.
