I absolutely love using the Giddy Yoyo Cane Juice Crystals in my cooking and baking. Here’s why:
1. It is minimally processed.
“The cane is fresh pressed, sun dried, and then put through a cooling process to crystallize. It is a “first crystallization” sugar which means the cane is harvested, the juice is extracted, all impurities are removed and then it is crystallized ~ and this is all done within 24 hours of harvest. The low heat and minimally processed crystals retain most of their nutrition and delicious natural flavour thus creating a VERY different sugar than what is currently commercially available.”
2. It incorporates well.
Because this alternative sweetener is crystallized, I find it incorporates well with fats like coconut oil and butter. Which tends to lend a fluffier finished baked product. It also dissolves quickly in liquids too, making it a very versatile sweetener.
3. It is not gritty like the others.
In the past I have used Sucanat and Coconut Sugar as sugar substitutes, which are both fine choices as well, except that they tend to be a bit gritty and must be softened in the liquid first to break down the granules. This can be annoying for beginners. Plus, I find coconut sugar to be a bit expensive, so I tend not to use this very often.
4. It makes great cookies.
I also like using maple syrup in my baking but this tends to get very expensive as well. Plus maple syrup only works well for muffins and cakes. To produce a crunchy cookie you need to use Cane Juice Crystals or Sucanat.
5. It is highly nutritious.
The Giddy Yoyo Cane Juice Crystals are gown in highly mineralized volcanic soil minimally processed at low temperatures to produce a completely raw product. The minerals are a bonus, adding tons of nutrition as well as sweetness to your food.
6. It is a true superfood.
I use this product primarily for baking, but the folks at Giddy Yoyo swear by it to boost and sweeten their smoothies. They call it an “old world superfood”.
7. It is low glycemic.
I find it less sweet than Sucanat and similar, if not less sweet than Coconut Sugar. You may need to increase the quantity to get a similar result to what you are used to.
8. It is 100% Organic and Ethically produced.
All of the Giddy Yoyo products are selectively sourced and beyond fair-trade. They are simply the best and it shows in the taste.
9. It is reasonably priced.
You can purchase a 1 lb. bag for around $6 Canadian. Or a 10 lb. bag for around $48 Canadian. I buy the larger sized bag because it is more cost-effective and has a really long shelf life.
