This is a super simple, delicious and filling pudding that is soon to become your favourite treat. Experiment with this recipe by adding your favourite ingredients.
1 cup raspberries (fresh or frozen and thawed)
3 tbsp chia seeds
1 cup coconut milk or almond milk (or 1/2 cup Yoso plain coconut yogurt plus 1/2 cup pure water or a bit more as needed to thin out)
3 tbsp white or black chia seeds
pinch of ground vanilla ( I like Giddy Yoyo brand), alternatively you can use vanilla extract
3 drops of vanilla cream stevia or 1 tsp+ maple syrup (note: if you sweeten with vanilla stevia you may not need the ground vanilla)
Place the milk or coconut yogurt and water in a glass bowl with a lid. Add chia seeds and vanilla if using and give it a stir. Purée raspberries and then add in the bowl with the other ingredients. Place the lid on the glass bowl and let sit at room temperature or in the fridge for 1 hour or more. When ready to serve, sweeten if necessary and thin out with a bit of water or more milk to desired consistency. Top with raspberries and coconut. Enjoy! Makes 1- 2 servings.
