Do you remember that cake your mom used to make, you know the one with the chocolate and beets added for richness. Well this smoothie is reminiscent of that, except it is so much better for you!! I love beets in my smoothie. They add a complex layer of sweetness and so much nutrition. This smoothie is loaded with antioxidants, vitamins and minerals but tastes like dessert. If you don't have high-powered blender you will need to lightly steam your beets to soften them a bit. This smoothie is inspired from a recipe I found on bokulovelife.com

Ingredients
  • 1 banana
  • 1 small beet (approx. a scant ½ cup chopped)
  • 1 handful baby spinach
  • 1 heaping tbsp raw cacao powder
  • 1 tsp chia seeds
  • 1 tbsp hemp seeds
  • ½ scoop of Boku Super Protein (or other vegan protein powder)
  • 1¼ cups coconut water
  • 5 drops of liquid vanilla stevia (or use a few dates, or 1 tbsp raw honey), optional
  • 2 cubes of ice to cool it down if desired (I prefer my smoothies room temperature but add ice to this for hubby)
Instructions
  1. Add all ingredients in a high-powered blender and blend until smooth. Drink immediately or place in a mason jar with a couple of ice cubes for drinking later.
