Fig, Pumpkin Seed and Kale Smoothie

When fresh figs are available and are not too expensive, I will indulge. I bought my latest for $9.99 for a flat of 27 at my local specialty grocery store. They are so delicious and are so good for you too. I will buy a large flat and eat half, then quarter and freeze the rest to use in my smoothies. They are high in fiber as well as iron and calcium and blend up nicely in a smoothie. Here is a wonderful mineral-rich superfood recipe that I have been making this week with my latest flat of fresh figs.

Ingredients
  • 4 fresh figs, quartered
  • ½ banana, optional (I didn’t put this in for myself but did for hubby)
  • large handful or more of baby kale (I used two)
  • 2 tbsp pumpkin seeds (optimally soaked overnight)
  • 1 tbsp black sesame seeds or 1 tbsp tahini or replace with 1 tbsp hemp seeds
  • ½ tbsp bee pollen (optional)
  • 1-2 tbsp goji berries (optional)
  • ½ tsp cinnamon or more to taste
  • 1 tbsp lemon juice or 1 drop of food grade lemon essential oil
  • 2 to 3 drops of vanilla creme liquid stevia to taste
  • 2 cups (more or less) of water to desired thickness
Instructions
  1. Blend in a high-powered blender for 20 seconds or until smooth.
  2. Enjoy the goodness!
