Nana Banana’s Famous Muffins

These are an adaptation of Nana’s (my mom’s) delicious banana muffins. I have been trying different healthy variations over the years and this is the recent favourite.

Ingredients
  • ⅓ cup maple syrup or ½ cup
  • Giddy Yoyo Cane Juice Crystals
  • ¼ cup coconut oil
  • 1 egg
  • 1½ cups whole spelt flour (or ¾ cup kamut + ¾ cup spelt)
  • 2 tbsp ground flax
  • ¼ cup oat bran, optional
  • 1 tsp baking powder
  • ½ tsp salt
  • 1 cup mashed or puréed bananas (approximately 3 bananas)
  • ¼ cup plain or vanilla rice milk
  • 1 tsp baking soda
  • 1 handful of good quality chocolate chips (we use Enjoy Life brand mini chips), optional
Instructions
  1. Preheat oven to 400F.
  2. Using an electric mixer, cream together maple syrup or cane juice crystals and coconut oil, then add in the egg until it is mixed through.
  3. In a separate bowl, whisk the dry ingredients together and then add to the egg mixture.
  4. Mix together until just combined and scrape down the sides of the bowl.
  5. In a separate small bowl, mix together mashed or puréed bananas, milk and baking soda and then add to the other ingredients.
  6. Using mixer, mix until all ingredients are well combined.
  7. Stir in chocolate chips, if using.
  8. Pour into lined or greased muffin pan and bake for 17 to 20 minutes until golden brown.
  9. Makes 12 large muffins.
