Raspberry Coconut Chia Pudding

This is a super simple, delicious and filling pudding that is soon to become your favourite treat. Experiment with this recipe by adding your favourite ingredients.

Ingredients
  • 1 cup raspberries (fresh or frozen and thawed)
  • 3 tbsp chia seeds
  • 1 cup coconut milk or almond milk (or ½ cup Yoso plain coconut yogurt plus ½ cup pure water or a bit more as needed to thin out)
  • 3 tbsp white or black chia seeds
  • pinch of ground vanilla ( I like Giddy Yoyo brand), alternatively you can use vanilla extract
  • 3 drops of vanilla cream stevia or 1 tsp+ maple syrup (note: if you sweeten with vanilla stevia you may not need the ground vanilla)
Instructions
  1. Place the milk or coconut yogurt and water in a glass bowl with a lid.
  2. Add chia seeds and vanilla if using and give it a stir.
  3. Purée raspberries and then add in the bowl with the other ingredients.
  4. Place the lid on the glass bowl and let sit at room temperature or in the fridge for 1 hour or more.
  5. When ready to serve, sweeten if necessary and thin out with a bit of water or more milk to desired consistency.
  6. Top with raspberries and coconut. Enjoy!
