Split Pea Soup with Fresh Peas and Dill

This soup is lovely. The addition of dill and fresh peas really freshens it up. It takes a bit of time to cook split peas, so make it on the weekend or in the evening when you have time to let it sit on the stove for awhile. Make it in the slow cooker if you have one, and just let it cook with the lid off for a half hour before serving. This will allow some of the water to evaporate off and the flavours to concentrate. I used my VitaClay Slowcooker for this batch and it was a breeze to prepare. Purée it or leave it chunky, or a bit of both, whatever you prefer.

Ingredients
  • 1 tbsp extra virgin coconut oil
  • 1 onion, chopped
  • 1 large carrot, chopped
  • 1 cup squash or potatoes, chopped
  • 2 stalks celery, chopped
  • 1 cup dry green split peas (soaked overnight)
  • 4 to 6 cups water
  • 1 bay leaf
  • ¾ cup fresh or frozen peas
  • 1 tbsp fresh dill (or 1 tsp dry)
  • 1 tsp good quality sea salt
  • pinch of freshly ground black pepper
Instructions
  1. In a large soup pot, sauté onions in the coconut oil until they are soft, approximately 7 to 10 minutes.
  2. Add carrot, squash or potato and celery along with the cumin. Sauté for 5 more minutes.
  3. Add 4 cups of the water, the soaked split peas and bay leaf. At this point you can transfer all items to a slow cooker or continue cooking on the stovetop.
  4. If using the soup pot, bring to a boil, then turn down to a simmer.
  5. Cook for 1½ to 2 hours, until peas are completely soft.
  6. When ready, scoop out a few ladles of soup and puree in your blender then add back to the pot. This adds a bit of creaminess. You can also purée the whole pot it you like. My picky eater prefers it smooth and creamy.
  7. When ready to serve, add fresh or frozen peas, fresh dill, salt and pepper.
  8. Continue cooking for a few more minutes until the peas added are tender but not overcooked.
  9. You can add more water at this point too if you want it to be a thinner consistency.
