Cold Spring Rolls with Asian Dipping Sauce

I avoided making these Cold Spring Rolls for ages, thinking that they would be hard to put together. I love them and always order them when I go to an Asian restaurant. When I finally attempted them I was thrilled that they couldn't be easier to make. If you can roll a burrito, you can easily make these. Add some beans or egg to make these more substantial or keep them light for simple and easy appetizers. To keep the rolls moist for leftovers, simply place in a covered glass dish and cover with a damp cloth. You can purchase the rice paper wrappers at most natural food stores, Asian grocery stores and some of the better grocery store chains.

Serves: 4 to 8 rolls
Ingredients
  • 4 to 8 sheets rice paper
  • bowl of warm water
  • 1 clean tea towel
  • romaine lettuce
  • 1 carrot, peeled and grated
  • ½ red pepper, sliced thinly
  • 4 inches cucumber, sliced into long strips
  • 1 avocado
  • cilantro or basil
  • add any other veggies of choice: asparagus, cabbage, apple, zucchini
  • Optional: add Korean Spiced Beans for a little added protein and Asian flavour
  • Optional: add in eggs cooked as a thin omelet and sliced into strips
  • Asian Dipping Sauce
  • This dipping sauce is so flavourful and simple to make. It also works well as a kid-friendly vegetable dipping sauce or drizzle, simply heat up and drizzle on or dip in your veggies.
  • ¼ cup almond butter (or use SunButter for a nut-free variation)
  • 2 tsp maple syrup
  • 1 tbsp tamari
  • 1 tbsp brown rice vinegar
  • 1 tsp grated ginger root
  • ½ tsp hot sauce
  • ¼ cup water or more or less to desired consistency
  • Blend all ingredients in a blender to emulsify then pour in small bowls for dipping.
Instructions
  1. Prep all of your ingredients and lay out on the counter in this order: rice paper wraps - bowl of warm water - clean tea towel - lettuce - veggies - avocado - beans/eggs if using.
  2. Carefully dip one piece of rice paper in warm water for 45 seconds until soft. (I sometimes put in 3 rice paper wraps at a time to speed up the process. I suggest you experiment with the wrappers you have chosen to make sure they don't stick together.) Remove, let it drip into the bowl, lay out on the tea towel and pat dry.
  3. Add lettuce first and then add your veggies of choice, ending with avocado and beans or eggs if using.
  4. Roll up bottom edge first, then the sides and roll into the last edge, just as you would a burrito.
  5. You can cover with another wrapper to clean up any mistakes, if necessary. I prefer these with one rice paper, but they hold together better with two. It is your preference.
  6. Serve with Asian Dipping Sauce (see recipe above).
