Ms. Pinky's Beet and Berry Smoothie

Serves: 1 to 2
- 1½ cups coconut water (or use pure water instead)
- ½ medium avocado
- 1 large celery, chopped
- 1 heaping cup strawberries, fresh or frozen
- ½ cup peeled and chopped raw beet (steam until tender if you don’t have a high-powered blender)
- 2 tbsp lemon juice, approx. ½ lemon
- 1 to 2 tbsp hemp seeds
- Add 2 to 5 drops vanilla cream stevia to sweeten if necessary (or use maple syrup, honey or dates)
- In a high-powered blender, combine all ingredients and purée until smooth.
