Herb-marinated Portobello Burgers

These burgers are always a huge hit. Simply throw these hearty portobellos on the grill with some peppers and sweet onions. When they are grilled to perfection, layer everything on an Ezekiel or whole grain bun and serve with your home made Simple Raw Ketchup (recipe on blog) or condiment of choice.

Ingredients
  • 4 large portobello mushrooms, stemmed
  • 2 red bell peppers, halved, seeded and deveined
  • ½ to ¾ cup herbed vinaigrette (see recipe below)
  • 1 large thick Vidalia or red onion, cut into 4 thick slices
  • 4 Ezekiel or whole grain buns
  • 1 ripe tomato, cut into 4 thick slices
  • Simple Raw Ketchup (recipe on blog) for garnish or condiment of choice
  • Herbed Vinaigrette (Use this vinaigrette to baste the portobello burgers and veggies):
  • 1 cups extra virgin olive oil
  • ½ cup apple cider vinegar
  • ¾ tsp sea salt
  • ½ tsp freshly ground black pepper
  • ⅛ cup fresh lemon juice
  • ⅛ cup chopped parsley
  • 1 tbsp chopped fresh or 1 tbsp dried oregano
  • 1 tbsp chopped fresh or 1 tbsp dried tarragon
  • ½ tbsp whole-grain Dijon mustard
Instructions
  1. Make the Vinagrette - Put all of the ingredients in a blender and blend until well combined. Taste and adjust the seasonings. The dressing will keep in the fridge, tightly covered, for up to 10 days. This is also a fantastic salad dressing and marinade. It makes quite a bit. You can cut the recipe in half if you don’t want leftovers.
  2. Prepare the grill.
  3. Grill the mushrooms and peppers over medium-hot heat, basting with the vinaigrette until softened, about 3 to 4 minutes per side.
  4. Add the onion slices, baste with the vinaigrette, and grill until softened, about 5 minutes a side. (Turn the onion slices carefully so that they don’t fall apart.)
  5. Lightly toast the buns, then layer with the grilled Portobello, red peppers, onion and tomato. Serve with home made ketchup or other favourite condiment.Tip: Sometimes I prepare the grilled peppers and onions in advance. This is great if you have company and want to spend time chatting rather than grilling.
