Simple Raw Ketchup

Serves: 2 cups
- 1 cup sun-dried tomatoes
- 1 cup chopped fresh tomatoes
- 1 inch ginger, chopped
- 1 tsp garlic
- 6 dates
- 2 Tbs maple syrup
- 1 Tbs apple cider vinegar
- 8 basil leaves
- 1 tbsp tamari soy sauce
- 1 tbsp chopped sweet onion
- ¼ cup olive oil
- Purée all ingredients together in a blender until smooth. This will keep covered in the refrigerator for up to 2 weeks. Makes approximately 2 cups.
