Black Bean Burgers

These were nicknamed Dirt Burgers by my son and his friend as they merrily chomped down a few of these tasty vegan, black bean burgers. They are delicious and so easy to make. Top with Salsa Guacamole, recipe below.

Serves: 6 burgers
Ingredients
  • 3 slices whole grain bread (such as spelt or Ezekiel) or use 1 cup gluten-free bread crumbs
  • 1 clove garlic
  • 1½ tbsp ground chia or flax mixed with 1½ tbsp warm water
  • 2- 14 oz. cans organic black beans, drained and rinsed
  • 2 green onions, finely chopped, white part only
  • 2 tbsp minced cilantro
  • ¼ cup grated carrot (1 small carrot)
  • ½ tsp ground cumin
  • 1 tsp chile powder
  • pinch of red pepper flakes or cayenne pepper
  • ½ tsp sea salt
  • ¼ tsp freshly ground black pepper
Instructions
  1. Place bread in food processor and grind into bread crumbs.
  2. Add garlic and grind into the bread mixture.
  3. In a separate small prep bowl, mix ground chia or flax with water and let sit for a few minutes.
  4. Next add the beans, onion, cilantro, carrot, cumin, chile powder, red pepper flakes or cayenne, sea salt, pepper, and chia mixture to the bread crumbs in the food processor. Process until smooth but still a bit chunky – or completely smooth if you have picky eaters.
  5. Form bean mixture into patties approximately ½ inch thick.
  6. These can be baked in the oven at 400F for 15 minutes or so, until lightly brown and firm. Alternatively, they can be grilled on the barbecue on medium heat for five minutes per side.
  7. Serve plain (bunless) or on an Ezekiel bun or english muffin with salsa guacamole below. Makes 6 burgers.Salsa Guacamole: Combine one whole mashed avocado, with ¼ cup store bought salsa, 1 tsp minced fresh cilantro and one chopped green onion (optional).
