Simply Romaine with Magic Dressing

It’s magic! Put this dressing on your picky eater’s salad and watch it disappear. This recipe makes a big batch and can be kept in the fridge for the week, if it lasts that long. Yes, there is a good amount of maple syrup in this recipe, but it is the secret and magical ingredient. Maple syrup is high in antioxidants and minerals, a true superfood, just make sure that it is the pure kind and not the fake sugary stuff. You can add this dressing to any salad, but my picky eater prefers it on crunchy romaine. Romaine is a highly nutritious green vegetable so I am fine with him having it plain and simple. Feel free to dress it up with more veggies, or change up the greens to your favourite.

Serves: 1 cup of dressing
Ingredients
  • Simple Salad:
  • Romaine lettuce, the crunchy light green parts (chopped, washed and spun dry)
  • Magic Dressing:
  • ¼ cup organic cold-pressed olive oil
  • ¼ cup organic Dijon mustard
  • ¼ cup pure maple syrup
  • ¼ cup organic apple cider vinegar
  • 2 tbsp organic balsamic vinegar
  • good pinch of salt and freshly ground pepper
Instructions
  1. Whisk together all dressing ingredients in a bowl or blender.
  2. Add salt and pepper to taste.
  3. Save extra dressing ingredients in the fridge for the week.
  4. Arrange prepared lettuce or salad in a bowl and add only enough dressing to cover.
  5. Toss and serve immediately.
