Use this delicious, healthy condiment on burgers or wherever you use store-bought ketchup. It is delightful and so simple to make.
1 cup sun-dried tomatoes
1 cup chopped fresh tomatoes
1 inch ginger, chopped
1 tsp garlic
6 dates
2 Tbs maple syrup
1 Tbs apple cider vinegar
8 basil leaves
1 tbsp tamari soy sauce
1 tbsp chopped sweet onion
1/4 cup olive oil
Purée all ingredients together in a blender until smooth. This will keep covered in the refrigerator for up to 2 weeks. Makes approximately 2 cups.
