Making a tea infusion is simple. It just takes a bit of forethought and preparation.
Here’s how to do it:
- Purchase a 1 litre* mason jar. I prefer the wide-mouth ones. You can also use a canning jar with a rubber seal. You can get these at any hardware store, your local re-use it centre, kitchen store, Ikea or your mom.
- Boil 5 cups of pure filtered water in a kettle or pot.
- Add 1/2 cup dry tea/herb to the jar while the water is boiling.
- Pour the just boiled water over the herb in the mason jar and fill it right to the top.
- Give it a bit of a stir with a spoon or fork, and then top it up with more water. Sometimes the herb absorbs a bit of water and the water level will go down. You want to have it filled right to the top.
- Run your finger along the edge of the jar so that there are no tea leaves/herbs sticking to it. Then add the lid to seal it.
- Leave it on the counter overnight or for 4 to 8 hours.
- Once you have created your infusion, you will want to strain out the tea leaves. Add strained tea to your compost or garden.
- Add the clear liquid back in your jar and refrigerate for up to 4 to 5 days.
- Reheat your tea infusion but don’t boil. This will help to retain as much goodness as possible. You can also drink this cold, or add to your soups, stews, smoothies, etc.
*If you love your infusions as much as I do you may want to use a a larger jar. I often use the 1.9 litre Bernadin wide-mouth mason jar and add 1 cup of tea/herb per jar.
